Greek Kalamata Olives
One of the most highly prized olives for black processing, the Kalamata is not to be found extensively, lying third in terms of the volume marketed. It derives is name from the major area in which it is grown, located primarily in the region surrounding the homonymous town in the south-east Peloponnese. Cylindrically-conically shaped, the fruit is curved and mucronate. Its size varies (180-360 olives/Kg) and its flesh/stone ratio is 8:1. It turns a beautifully black color when it reaches maturity and gains its special organoleptic characteristics from its high oil content. A late ripener.
